Keto Cauliflower Casserole With Ham And Low Carb Beschamel Sauce




CAULIFLOWER CASSEROLE WITH HAM AND LOW CARB BECHAMEL SAUCE INGREDIENTS:



  • cauliflower head: preferebally organic.

  • ham: ham of your choice

  • cheese for the topping: I used shredded mozarella cheese – but you can use other varieties as well – just go for what you have at home.

  • Ingredients for the Low Carb Bechamel Sauce (White Sauce):

  • butter: preferably grass fed butter

  • full fat cream cheese

  • heavy cream

  • seasonings: salt, pepper & nutmeg

HOW TO MAKE THIS CAULIFLOWER CASSEROLE WITH HAM AND LOW CARB BECHAMEL SAUCE:

1. Cook the cauliflower:
Remove the dirt from the cauliflower head.
Cut the florets from the head and cook them in a small pot with salt water until fork tender (approx. 10 minutes.)
Drain the water from the pot and transfer the florets into an oven-safe casserole dish.
Add the ham to the casserole dish and preheat the oven to 390°F/200°C.
Optional: Fry the ham for a few minutes. I didn’t fry the ham because I don’t like the taste of it. If you decide to fry the ham, be careful with the salt you add because the fried ham has a heavy salty taste.

2. Prepare the Bechamel Sauce:
Melt the butter in a small pot.
Add the cream cheese as well as the heavy cream to the pot and heat over low to medium heat until the cream cheese has melted.
Season with salt, pepper and a pinch of nutmeg.
Add the Bechamel sauce to the casserole dish.

3. Top with cheese and bake:
Top the casserole dish with shredded cheese of your choice and put the dish into the oven.
Bake at 390°F/200°C for approx. 20 minutes, until the cheese on top has a golden brown color.

4. Serve:
Serve warm with fresh parsley.
